Our approach to cacao sourcing

We source cocoa beans and cacao fruit ingredients directly from growers and processing partners across the world's key origins, selected for quality, traceability and consistency rather than a single plantation of origin.

A curated network of origins

Our sourcing network can draw on several of the world's established cocoa-growing regions. The mix we offer at any given time depends on season, quality and the profile a buyer is looking for.

What we look for at origin

Every partner in our network is assessed against the same criteria before a lot reaches a buyer.

Fermentation & quality control

Cut tests, moisture control and sensory evaluation at origin, so the beans and derived ingredients we offer meet a consistent quality bar.

Traceability & documentation

Lot-level tracking back to origin, with certificates of analysis and phytosanitary documentation available on request for import clearance.

Responsible sourcing

We favour partners who pay fair prices for whole pods and invest in growers, and who manage fermentation and drying with care for the surrounding environment.

From fermentation to your production line

The same steps apply whichever origin a lot comes from.

Harvest & fermentation

Pods are harvested and opened, and the beans, still covered in pulp, are fermented in boxes or heaps for several days to develop the precursors of chocolate flavour.

Drying & cut test

Beans are sun-dried to a target moisture level, then sample-cut to check fermentation quality, colour and the presence of defects before a lot is accepted.

Export documentation

Certificates of analysis, phytosanitary certificates and other market-specific paperwork are prepared ahead of shipment.

Processing on request

Beans can be supplied as is, or processed further into cocoa butter, cocoa liquor and cocoa powder to match what your production line needs.
